Classic Chicken and Lettuce Sesame Supreme Bagel

Ingredients:

  • 1 Sesame New York Bakery Co Bagel, toasted
  • 100g chicken breast, sliced
  • 2 tsp. extra virgin olive oil
  • 2 pinches oregano
  • Squeeze lemon juice
  • Quarter baby gem lettuce
  • Salt and pepper
  • 1 tbsp. mayonnaise
  • 1tsp. hot sauce
  • 1 roasted red pepper (from a jar)

Method:

  1. Place the chicken in a small bowl and drizzle with half the extra virgin olive oil and oregano. Add the lemon juice and season well with salt and pepper.
  2. Drizzle the remaining extra virgin olive oil over the cut sides of the baby gem, sprinkle with the remaining oregano, and season with salt and pepper.
  3. Heat a griddle pan over a medium to high heat and cook the chicken for 3-4 minutes on each side, or until strong griddle lines appear and its cook through.
  4. Cook the baby gem lettuce for 1-2 minutes or until griddle lines appear.
  5. Mix the mayonnaise with the hot sauce and spread on the bottom side of the toasted bagel.
  6. Top with the roasted red pepper, the chicken fillets and the baby gem lettuce, and top with the toasted bagel lid.
