Ingredients
For the Hobnobs:
- 20g vanilla whey
- 30g oat flour
- 10ml coconut oil, melted
- 10ml agave syrup
- Pinch baking powder and sea salt
- 7 tsp Prutella
For the topping:
- 35g 75% chocolate
- 1/8 tsp coconut oil
Method
- Preheat the oven to 180C.
- Combine the dry ingredients. Add the melted coconut oil, and the agave. Mix it up and rub together until it forms a crumble like mix.
- Get small shaped silicone mould. Use 5g of this mix to fill 14 holes. Press the mix down until firm. Bake for 8 minutes or until golden. Allow to cool.
- Use the Prutella to sandwich them together to make 7 sandwiched biscuits.
- Pop in the freezer until cold.
- Meanwhile, melt the chocolate and stir in the coconut oil (optional but makes coating easier).
- Dunk the chilled sandwich biscuits in the chocolate to give a thin coating. For a thicker coating, melt more chocolate. Allow to set a keep in the freezer/fridge.
