This easy egg dish is perfect for Chinese New Year celebrations - cooked at home from store-cupboard ingredients (rather than having a pricey take-away).
Serves 4 / Prep time: 20 minutes / Cook time 20 minutes
Ingredients:
350g long grain rice
10g butter
4 Eggs For Soldiers, beaten
2 tbsp vegetable oil
1 onion, finely chopped
1 garlic clove, crushed
1 red pepper, deseeded and chopped
125g fine green beans, chopped
4 teaspoons Chinese five spice
1 teaspoon cumin seeds
300g frozen cooked peeled prawns
125g frozen peas
Salt and freshly ground black pepper
Chopped fresh coriander, to garnish
Method:
1. Put the rice on to cook in a saucepan of lightly salted boiling water for 10-12 minutes, until tender.
2. Meanwhile, make an omelette. Simply melt the butter in a large non-stick frying pan and add the beaten eggs, cooking them over a low heat to set the base, then drawing in the sides with a spatula so that the uncooked egg flows to the edges and cooks. When the surface has set, fold the omelette in half and slide it onto a warm plate. Wipe the pan clean with kitchen paper.
3. Heat the vegetable oil in the frying pan and gently fry the onion, garlic, pepper and green beans for 3-4 minutes, until softened. Add the Chinese five spice and cumin seeds and stir for another minute, then add the frozen prawns and peas and cook for 2-3 minutes, stirring often.
4. Drain the rice thoroughly and add it to the frying pan. Slice the omelette into thin strips and add it to the pan. Season and stir together. Pile onto warm serving plates and serve, sprinkled with chopped coriander.
Cook’s tip: Another time, hard-boil the eggs for 10-12 minutes and serve each portion with one egg, cut into quarters.
