Hello everyone,
So we have had a wonderful week in Thailand the weather has been gorgeous and the views are phenomenal. We have managed to really switch off and relax even though I am still kind of working. I never fully stop but you can't when you love what you do. We chose to stay in the Banyan tree in Koh Samui and it hasn't disappointed, it is probably one of the most stunning places I have ever visited. This week has been particularly special as my boyfriend of 3 years proposed to me, it was absolutely magical.
We had dinner on the beach surrounded by roses, petals spelling the words love in the sand and some very romantic music in the background. After our main course, we decided to have a picture taken looking out onto the beach, suddenly he looked me in the eyes, got down on one knee and asked if I would marry him! Then suddenly a photographer popped out of nowhere and a 15-minute firework display was organised by my now fiancé to celebrate. It was absolutely magical, the ring is overwhelmingly beautiful and I couldn't be happier to be marrying my best friend and soul mate.
I wanted to share with you this wonderful breakfast pot which I love making, is a perfect way to add fibre and calcium in your morning diet. It is also dairy free, vegan and soya free. The blueberries help towards painting healthy bones, lowering blood pressure, managing diabetes and the Vitamin A and C function as powerful antioxidants which all help to prevent cancer. The fibre, potassium, folate and B6 all support heart health. It is also known that blueberries help with anti-aging and prevent wrinkles. Unsweetened coconut yoghurt which I recommend has no added sugar and is a great source of fibre, low in calories and fat.
Coconuts are highly nutritious and rich vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose-free so can be used as a milk substitute by those with lactose intolerance, milk allergy and vegans. This week I am sharing with you a lovely product from Aduna which is the super cacao powder, a wonderful new product which contains so many health benefits and here I share them with you. Aduna has launched this product and it is the first cacao powder approved by the EU for heart health. They say 2 teaspoons per day will help cardiovascular health, elasticity of arteries and healthy blood circulation.
This product is also packed full of antioxidants which help towards maintaining healthy skin. I tried this in a few different forms, first of all, a hot chocolate, I heated some coconut milk up and put 1 teaspoon in, stirred it round and it was delicious! Cacao trees are found in the tropical regions all over the world but predominantly two-thirds of the world's cacao supply come from West Africa. The cacao tree, Theobroma cacao, bears large melon size fruits called cacao pods. When the pods are ripe, they are cut from the tree, collected and split open to reveal rows of cacao beans covered in a white pulp. The pulp is removed, the beans are fermented, dried and cleaned before processing into cacao powder.
