Ingredients:
- 2 cups oats
- 1 carrot, grated
- 2 tbsp cinnamon
- 1/3 cup coconut oil
- 1/4 cup maple syrup
- 4 medjool dates
- 1/4 cup desiccated coconut
- 1/4 cup chopped pistachio nuts
Method:
- Preheat the oven to 190 degrees and line a baking tin with greaseproof paper.
- In a bowl pour in the oats, grated carrot, medjool dates, pistachio nuts, cinnamon and desiccated coconut. Stir together until well combined.
- In a separate bowl, melt together the coconut oil and maple syrup on the hob or in the microwave.
- Pour the liquid ingredients onto the dry ingredients and stir through so that everything is well coated.
- Tip the mixture into the baking tin and pat down with the back of a spoon until level.
