Happy May bank holiday weekend, I hope you are all having a wonderful weekend whatever you might be up to. I am currently in Lake Garda in Italy which is just one of the most stunning places in the world. My boyfriend and I come every year to the same resort for at least a long weekend as it is where we can rest and recover and because we know the hotel and the staff it almost feels like a second home. The views are magnificent and I have shared a photo with you as words cannot describe how beautiful it is.
I will be able to share some more restaurants with you next week as we have only been here a few days. Italy is fantastic when it comes to being a coeliac, they are so knowledgeable as it is a common problem in Italy and every restaurant you go they are fully prepared with gluten free pasta, gluten free pizza and alternatives.
Restaurant Hangout of the Week
A wonderful restaurant which we happened to find whilst driving around Lake Garda was this small family run restaurant based in Tignale in the mountains called Al Torchio Ristorante Pizzeria. It is a real gem that we just happened to stumble across and so we went in and asked if they did anything gluten free, to my delight they had an oven wood burning oven with a dedicated gluten free area and they make all their pizza's from scratch and boy can you tell they are fresh. The gluten free pizza was so delicious, it wasn't thin and stale like a lot of the bases you come across, it was thick and doughy and light.
It was so good that my boyfriend even wished he had ordered the gluten free pizza which really says something when he is a huge gluten lover The topping options are vast and you can even create your own pizza. I went for tomato base which was full of basil and delicious flavours with parma ham, olives, and spinach on top. This pizza really was to die for and I strongly recommend a visit to this restaurant if you visit Lake Garda. You can find the full details and address on the app, just search the area Tignale.
I also want to share with you a product this week, I have been having a week of making things using the range from Alpro, they offer a variety of different kinds of milk which are suitable for many diets including gluten free, dairy free and plant based. I generally switch between coconut, hazelnut and almond milk and I use them for different things. Almond milk I used in tea, coconut milk I use on cereals and the almond and hazelnut I use on overnight oats or smoothies.
One of their newer additions is the dark chocolate almond milk and I have become a little obsessed with making overnight oats using this, it is totally delicious especially topped with strawberries and I always add the superfoods chia seeds and flaxseed into my overnight oats for some added nutrients and minerals to keep me energetic through the day.
So my recipe of the week is these delicious overnight oats in dark chocolate almond milk, although it may seem a little naughty it is a lot better than eating a sugary cereal so give them a try:
