St George's Day is the perfect excuse to cook up a feast of classic English dishes and celebrate our national day and patron saint of England.
Serves 4
Ingredients:
- 2 tbsp Apple, Pear & Fig Chutney
- 285 ml milk
- 115 g plain flour
- 1 pinch salt
- 3 free-range eggs
- 8 good quality sausages
- 4 tbsp sunflower oil
Method
- Pre-heat your oven to 240 degrees.
- Add the sunflower oil to a deep baking tin & place on the centre shelf of the oven. After around 5 minutes, or when the oil is very hot, add the sausages & return to the oven. Carefully turn the sausages in the oil until the sides are golden.
- Meanwhile, crack the eggs & whisk into the milk. Sift the flour into a large dish & gradually add the milk & egg mixture, whisking with a hand or electric mixture until smooth & all the flour is combined. Add the Apple, Pear & Fig Chutney & pinch of salt to the batter mixture.
- Remove the baking tray with the sausages in from the oven & pour over the batter. Return the tray to the oven & leave for about 20 minutes with the door closed for the batter to rise & become a lovely golden brown colour.
- Serve with greens, apple cider gravy & more chutney on the side!
