Strictly Come Dancing semi-finalist and Countryfile presenter Anita Rani shares her favourite pancakes - perfect for the weekend when there's time to indulge.
Serves: 6
For the batter:
- 170 g plain flour
- 30 g Fairtrade caster sugar
- a pinch of salt
- 2 eggs
- 250 ml milk
For the filling:
- 3 Fairtrade bananas
- 2 Fairtrade lemons
- 100 g Fairtrade Honey
- 80 grams Fairtrade Cashew or pecan nuts
- 2 tsp Fairtrade cinnamon
- 100 g yoghurt
Method:
- Sieve the flour, salt and sugar into a bowl. Beat the eggs lightly and whisk into dry ingredients.
- Add milk gradually and whisk to a smooth batter. Set aside for 30 mins to rest.
- Place a medium frying pan over a medium heat and oil the pan. When hot, add a ladle of batter and fry for 1 min until golden - flip and fry the other side to get an even colour.
- Transfer to a plate, and squeeze some fresh lemon juice over the pancakes and spread with yoghurt.
- Add bananas, honey and crushed cashew nuts with a sprinkle of cinnamon. Serve.
