Ingredients:
1 ripe but firm mango, peeled, stoned and cubed
1 small pineapple, peeled, cored and cubed
2 kiwi fruit, peeled and quartered
12 large strawberries, halved
8 tbsp granular Canderel
3 tbsp water
juice and zest 1 lime
Method:
Prepare all the fruit and thread on to small bamboo or metal skewers. If using bamboo skewers they need to be soaked for 30 minutes in water before using.
Put the Canderel into a small pan with the water and heat gently to dissolve. Add the lime juice and zest and stir together. Brush the skewers then place on the barbecue or under the hot grill and turn ever minute until they are lightly caramelised on each side, brushing with the glaze.
