Get Baking and Celebrate National Cupcake Week
Kitchen’s up and down the country will be buzzing with excitement next week as baking enthusiasts get creative making cupcakes to celebrate National Cupcake Week (12th -18th September).
The divine Super Cupcake is easy to make and contains only 374 calories, so you can enjoy a treat with fewer calories. Why not opt for a healthy topping by adding a cherry or blueberry to complete your cupcake.
Super Cupcake
Serves: 12
Cooking Time: 20 minutes
Preparation Time: 15 minutes
Ingredients
200g butter or low fat margarine at room temperature
15g Canderel Yellow Granules
200g self-raising flour, sifted
2 large eggs
1 tsp baking powder
1/2 tsp vanilla essence (optional)
3-5 tbsp semi skimmed milk
Frosting
300g cream cheese
200g unsalted butter at room temperature
10g Canderel Yellow Granules
Your chosen food colouring (optional)
Method
1. Preheat the oven to 180C and place 12 paper cupcake cases onto a tin.
2. Using an electric whisk, food processor or wooden spoon, beat the butter and sweetener until very light and fluffy.
3. Add the eggs one at a time, beating each one in well before adding the next. Add the vanilla essence if using.
4. Carefully fold in the flour and baking powder. If batter is too stiff, use milk to loosen the mixture.
5. Alternatively, you can mix the ingredients together using a food processor. Use the pulse button to mix together in between adding the ingredients in the order above.
6. Bake in the oven for 20 minutes. After 10 minutes, check to see if the cakes are cooked through by pushing a knife in and it should come out clean.
7. To make the frosting: When the cakes are cool, beat the butter and sweetener until soft and - this should be light and fluffy.
8. Fold in cream cheese and add colour then spoon or pipe over the cupcakes. Decorate with your own creative flair!
