Scientists Create The Ultimate Super Sandwich

Next generation snack can prevent bloating - Gluten-free bread has more nutritional value than normal bread


Ever since John Montagu, the 4th Fourth Earl of Sandwich, asked his butler to deliver his supper between two slices of bread to avoid the perils of getting greasy fingers on his playing cards, the British public has enjoyed an enduring love affair with the humble sarnie.

Now food scientists at Queen Margaret University in Edinburgh have come up with a recipe for what makes the ultimately tasty yet nutritional sandwich.

Academics at the university tested a number of different bread and filling combinations before settling on turkey and cherry in gluten-free bread as an ultimate 'supersarnie'.

The full recipe calls for turkey, cherries, as well as sherry vinegar, rocket, olive oil and a small amount of blue cheese such as gorgonzola, between two slices of gluten-free brown bread.

And the sandwich is great for elite athletes, such as tennis stars Andy Murray, and Novak Djokovich, who have said they have ditched gluten to boost their prowess on the courts.

An increasing number of other high profile stars are adopting a gluten free diet including Lady GaGa, Gwyneth Paltrow, Rachel Weitz and Jennifer Aniston.

The cherries in the supersarnie provide an excellent source of antioxidants, while the turkey is full of protein. Sherry vinegar contains iron and sodium and the rocket provides vitamin A, C and folic acid, not to mention the calcium, protein and Vitamin A also found in the gorgonzola.

The researchers also looked at the nutritional benefits of Genius gluten free bread compared with normal supermarket own brand bread. They found that Genius bread was nutritionally superior with higher levels of calcium, copper, iodine, iron, magnesium, manganese, phosphorous, potassium, sulphur and zinc.

Although only 1 in 100 people in the UK are diagnosed as being gluten-intolerant, it is believed that a much bigger number experience bloating or post-meal energy slumps from eating too much gluten.


Turkey and Cherry Sandwich The full recipe:

Ingredients:

2 slices of Genius bread
2 oz turkey breast
3 oz cherries (pitted and halved)
1 oz mild blue cheese, such as gorgonzola
1 teaspoon sherry vinegar
salt and pepper
rocket
olive oil


Method:

Combine the cherries and vinegar in a small, glass bowl and season well with salt and pepper. Mix and set the mixture aside to macerate for at least 10 minutes.

In a separate small bowl, toss the rocket leaves with a little olive oil and set aside.

Layer the rocket, turkey breast, and cheese, then top with the cherry mixture, including any juices in the bowl.

Close the sandwich with the top piece of bread, press down until it’s flattened, and wrap it in aluminium foil.

Place the wrapped sandwich on a heated pan or on the grill and weight it down with a heavy object.

Grill for about 10 minutes turning the sandwich over half way through. The bread should be toasted and the cheese is melted.

Let it rest in the foil for 3 to 4 minutes before eating.
