Made from apples, vanilla and cinnamon, Rekorderlig Winter Cider is a great addition to any winter warmers you may be trying out this winter.

Onion and Cider Soup
Serves 4
Ingredients
• 3 medium onions
• 1 clove of garlic, chopped
• 1 sprig of thyme, chopped
• 1 bottle of Rekorderlig Winter Cider
• 2 litres chicken stock
• 1 tbsp cider vinegar
Method
Slice the onions finely and sauté on a low heat for 45 minutes until golden.
Add the chopped thyme and garlic.
Add the Rekorderlig Winter Cider and reduce until only the onions remain in the pan.
Add the chicken stock and reduce by half. Season with the vinegar, salt and pepper.
Serve with warm crusty bread.
Cinnamon and Cider Chutney
Serves 4
Ingredients
• 3 Golden Delicious apples, chopped
• 1 bottle Rekorderlig Winter Cider
• 30g sugar
• 20ml cider vinegar
• 1 cinnamon stick
• 1 onion, chopped
Method
Place the Rekorderlig Winter Cider, sugar and vinegar in a saucepan and reduce by half.
Add the chopped apples, chopped onions and cinnamon stick and cook until a thick texture is formed.
Allow to cool, then serve.
Pork and Cider Cassoulet
Serves 4
Ingredients
• 100g white beans, soaked
• 50g chorizo sausage, sliced
• 1 salted & smoked ham hock
• 100g pork belly
• 100g garlic sausage
• 1 white onion, chopped
• 3 carrots, diced
• 3 garlic cloves, whole
• 3 sprigs of thyme, chopped
• 2 bay leaves
• 1 bottle of Rekorderlig Winter Cider
• 1 litre chicken stock
Method
Put all the ingredients into a pressure cooker and simmer for 2 hours until the beans are soft and the ham hock is falling off the bone.
Pick out the bones from the ham hock and serve.
Vanilla Cheesecake with Raspberry and Cider Jelly
Serves 4
Cheesecake Mix
• 500ml double cream • 50ml milk
• 1 vanilla pod • 2g ground black pepper
• 150g caster sugar • 250g cream cheese
• 2 gelatine leaves
Jelly Mix
• 200ml Rekorderlig Winter Cider
• 200g raspberries • 2 leaves of gelatine
Cheesecake Method
Put all ingredients except the gelatine into a pan and bring to the boil.
Soak the gelatine leaves in cold water and when soft add to the hot cheesecake mixture, stir well.
Carefully fill 2/3 of a cold martini-style glass with the cheesecake mix and allow to set in the fridge.
Jelly Method
Boil the Rekorderlig Winter Cider and raspberries for 5 minutes and then strain through a chefs muslin.
Soak the gelatine in cold water until soft and add to the hot cider/raspberry mix.
Let it cool slightly and then pour half a centimetre on top of the set cheesecake mix in the martini glasses.
