First in the series is this plum tomato sauce with a twist; a kick of chilli flakes. James shows you how to make this simple sauce by cooking it in a tinfoil bag, to lock in the intense flavour of the ingredients and create a truly versatile sauce. It can be used from everything to accompanying a pasta dish, or as a pizza base. Here James demonstrates how it can complement the flavour of delicious sauteed king prawns.
Cooking time: 15 minutes
Ingredients:
- 500g plum tomatoes
- 1/2 chopped onion
- 2 cloves of chopped garlic
- 80ml vegetable stock
- 1 tsp chilli flakes
- 1 tsp tomato puree
- 1 tsp brown sugar
- Dash of balsamic vinegar
- Pinch of salt
- Pinch of pepper
- Cooking oil
You'll also need two large pieces of tinfoil, and a sheet of baking parchment.
