This week is British Sandwich Week, the perfect time to get creative with your sarnies.
Pilgrims Choice recently launched their new sandwich app offering inspiration and delicious, mouth-watering recipes. ‘Good Sandwich Pilgrim’ is FREE to download from the app store and contains over 100 expertly selected recipes to suit your every mood, taste and sandwich occasion.
To help narrow things down, simply select a category, for example ‘Cheesy’, and a range of Pilgrims Choice cheese recipes will appear to inspire your lunch choice. CHORIZO, RED PEPPER AND CHEDDAR
Spanish chorizo, roasted red pepper and cheddar with a smoked paprika mayo on focaccia
· 2 slices focaccia
· 50g Pilgrims Choice Lighter Cheddar
· 6 slices chorizo sausage
· ½ roasted pepper, sliced
· 1 tbsp mayonnaise
- Grill the slices of focaccia, top with the mayo followed by the chorizo, cheese and pepper. Top with the other slice of focaccia and serve
Tip: Mix some paprika into the mayo for a smoky taste
MIGHTY MEATBALL CIABATTA
Mighty meatball with tomato chilli sauce on ciabatta with cheddar and mozzarella melt
· 1 small ciabatta, toasted and sliced open
· 25g Pilgrims Choice Lighter Cheddar, grated
· 25g mozzarella, chopped
· 200g tomato and meatball pasta sauce
· ½ red chilli, finely chopped
- Heat through the meatball sauce, stir through the chilli and pour onto the ciabatta. Sprinkle over the cheese and pop under a hot grill for 1-2 minutes until the cheese has melted
Tip: You can buy readymade cooked meatballs in a sauce from the supermarket
ITALIAN FOUR CHEESE PANINI
Italian four cheese panini with basil and tomato
· 1 slice each Pilgrims Choice Extra Mature Cheddar, gorgonzola, mozzarella and parmesan
· 1 tomato, sliced
· 4 basil leaves, picked
- Lay the slices of tomato over the base of the Panini and top with the cheese and basil leaves. Toast in a Panini press or under grill for 2 minutes until the cheese has melted
MEXICAN BEAN WRAP
Mexican bean and cheddar wrap
· 1 tortilla wrap
· 50g Pilgrims Choice Lighter Cheddar, grated
· 6 tbsps mixed beans, mixed with pinch of chili flakes, 1tsp chopped coriander and a squeeze of lime juice
- Fill the tortilla with the beans and cheddar and wrap up tightly, cut in half and serve
BACON CHEESE BAGEL
Toasted cheddar breakfast bagel with maple-cured bacon and ketchup
· 1 bagel, sliced in half and lightly toasted
· 50g Pilgrims Choice Mature Cheddar, grated
· 2 rashers of maple-cured bacon, grilled
· Butter
- Spread each bagel half with butter, top with a rasher of bacon and sprinkle with the cheese
- Place under a medium grill until the cheese has melted
Tip: Best served with ketchup
