With the rain set to have stopped this weekend, why not cook up these homemade burgers as a treat with family/friends and top with delicious Mu cheese slices to make them extra special.

Ingredients
- 500g (1lb 2oz) extra lean minced beef
- 4 spring onions, finely chopped
- 2 tsp mixed dried herbs
- 3 tbsp chopped fresh parsley or chives
- 1/4 tsp medium chilli powder
- 15g (1/2oz) butter
- 2 red onions, thinly sliced
- 1 tsp caster sugar
- 1 tbsp balsamic vinegar
- 2 tsp wholegrain mustard
- 4 burger buns, sliced in half
- A couple of handfuls of mixed salad leaves
- 4 MU Slices
Method
Mix together the mince, spring onions, dried herbs, parsley or chives and chilli powder. Season well, then shape into 4 burgers. Cover and chill until ready to cook.
To make the onion relish, melt the butter in a frying pan and gently fry the red onions for about 5 minutes, until softened. Add the sugar and cook for another few minutes until very soft and caramelised. Add the balsamic vinegar and mustard, cook for a few moments, then leave to cool whilst cooking the burgers.
Preheat a char-grill pan, grill or barbecue. Cook the burgers for 5 minutes on each side. If you like them well done add an extra couple of minutes to the cooking time.
Lightly toast the burger buns on the cut sides. Top with some salad leaves, then place a burger on top of each one. Finish off with slices of Cheddar and spoonfuls of the warm red onion relish.
