Rosewater and Blackberry Jellies
Serves: 6
Preparation time: 10 mins plus setting time
Ingredients:
500g fresh blackberries
2 x 7g sachets of gelatine or use the equivalent gelatine sheets
40ml of rosewater
3-4 tsp pure via sweetener
Method:
1 Add the blackberries to a shallow pan and pour in enough water to just cover. Simmer gently for about 5-8 minutes then remove and pass through a sieve and put the juice to one side to cool.
2 Firstly prepare the rose jelly, add 1 x sachet of gelatine to a measuring jug and add about 3 tbsp of boiling water and stir to dissolve then add the rose water. Stir in half the pure via and top up with 450ml/1pint of cold water. Now divide evenly between six serving glasses and leave to cool. Once cooled, put in the fridge and leave to set. This is probably best done overnight.
3 Now prepare the blackberry jelly, tip the sachet of gelatine into a measuring jug, adding 3 tbsp of boiling water and stir to dissolve. Now add the blackberry juice and remaining sweetener, stir and top up with 450ml/1pint of cold water. Pour this over the six set jellies and leave to cool then place them in the fridge and leave to set. Serve topped with a mint leaf if you wish.
