Red Onion Marmalade, Smoked Sausage and Feta Mini Pizzas
Makes 32
Ingredients:
8 mini pitta breads (30g each)
300g red onion marmalade
1 x 227g Mattessons Smoked Pork Sausage, halved horizontally and sliced thinly
50g feta cheese
2 tbsp freshly chopped parsley
Method:
Toast the pittas for 30 seconds on each side under a hot grill. Cut each one in half and then open into a pocket and cut down each side to give 2 flat breads.
Spoon 1 tsp of red onion marmalade on to each piece of bread.
Top each one with 3 or 4 slices of Mattessons Smoked Sausage.
Crumble over 1 tsp of feta cheese and grill for 1 minute.
Sprinkle with freshly chopped parsley to serve.
