Loaded Potato Wedges

Ingredients:
4 large baking potatoes
2 tsp oliveor vegetable oil
120 g Philadelphia Light
8 tbsp fresh tomato salsa
1 small ripe avocado, roughly chopped
2 rashers streaky bacon, grilled until crispy and chopped
1 tbsp chopped chives
crisp green salad, to serve
Method:
Pre-heat the oven to 200 degrees C, gas mark 6
Scrub potatoes leaving skins on. Cut each into long wedges, place in a roasting tin and brush with oil. Cook in the oven for about 45 minutes or until crisp.
Top potato wedges with Philly, salsa and avocado or Philly, bacon and fresh chives. Serve with a crisp green salad.
