Florentines
Makes: about 20 mini Florentines
Preparation time: 20 mins plus cooling time
Cooking time: 15 mins
Ingredients:
25g low fat spread or butter
10g pure via sweetener
10g plain flour
125g mix dried fruit roughly chopped (sultanas, cherries and candied peel)
50g whole un-skinned almonds, roughly chopped
50g dark 70% chocolate, broken into even pieces
Method:
1 Preheat the oven to gas mark 5/190C (375F). Add the low fat spread, pure via and flour to a pan and heat and stir until melted.
2 Remove from the heat and stir in the fruit and nuts until it is fully combined then put to one side to cool. Once cooled, roll heaped teaspoons full into balls and sit on a lightly oiled baking sheet (you will need two). Leave a space in between each one and flatten each one into small rounds. Bake for about 12-15 minutes until golden then remove and leave for about 5 minutes before carefully transferring them to a wire rack to cool.
3 Add the chocolate to a heat proof bowl sat over a pan of barely simmering shallow water and stir until melted. Coat the base of each Florentine with the melted chocolate and leave to set and harden.
Tip: Just before it sets you can use a fork to make a wavy line on the chocolate
