Apple and Banana Strudel
Winter is also a great excuse for spending more time in the kitchen baking some traditional favourites! Have a go at making the English Apple and Banana Strudel.
Serves: 4 - 6
Cooking Time: 15 - 25 minutes
Preparation Time: 15 minutes
Ingredient's:
Strudel:
1 packet of Filo pastry
Approx. 100g butter, melted
Apple filling:
Approx. 300g apples, chopped
3 bananas, peeled and chopped
2½ tbsp Canderel Granules
1 tsp cinnamon
50g breadcrumbs
50g chopped mixed dried fruit and nuts
Yogurt berries:
400ml Greek yogurt
3 tbsp honey
1-punnet raspberries
1-punnet strawberries
Method:
1. For the filling, add the chopped apples with the chopped banana and Canderel Granules to a bowl and mix well. Then mix in the dried fruit and nuts, cinnamon and breadcrumbs.
2. Over a flat surface, take a sheet of Filo pastry, brush with butter and lay horizontally over a clean tea towel. Repeat 6 times to build up layers with 6 sheets of pastry.
3. Spread the fruit along the edge of pastry that’s closest to you, leaving a small border for folding. Fold in the ends, and using the tea towel roll the pastry away from you as if rolling a roulade. Brush with melted butter.
4. Bake the strudel for 15 - 25 minutes in the oven at 200C. Remove and allow to rest.
5. Mix the yogurt with most of the fresh berries (reserve some for dressing) and add 2 tbsp of honey.
6. Slice the strudel, add a spoonful of yogurt berries, drizzle with honey and decorate with any leftover berries.
Tip: You can use any fruit or berries depending on your taste or the time of year.
