By replacing the thick, heavy base with a light, crisp tortilla, Discovery have given the Quiche Lorraine a tasty twist! Here’s how to do it.
Tortilla Quiche Lorraine
Serves: 4
Preparation: 10mins
Cooking: 30mins
Ingredients:
200ml crème fraiche
142 ml double cream
2 eggs, beaten
1 tbsp oil
1 large onion, chopped
100g bacon, chopped
1 large Discovery Flour Tortilla or Discovery Wrap and Roll
50g Cheddar cheese, grated
Method:
• Preheat oven to 200°C
• Mix together the crème fraiche, cream, eggs, a little salt and plenty of black pepper
• Heat the oil in a frying pan and fry the onion and bacon for about 5 minutes, until lightly cooked
• Line an 8”/20cm loose bottom sandwich tin with the tortilla
• Spread the bacon mixture over the tortilla, pour over the egg mixture and sprinkle with Cheddar
• Cook in the preheated oven for about 25 minutes or until browned and lightly set
• Cool slightly before taking out of the tin
• Serve warm
