Healthy Recipes: Grilled Salmon with Fennel Salad

January is a time to detox and shift all that extra weight we gain at Christmas, so make it easier by indulging in this delicious and healthy grilled salmon with fennel salad.

Fish is great for boosting your Omega 3 and fennel is the perfect way to help lose weight healthily, enjoy!

Grilled Salmon with Fennel Salad

Ingredients:

2 salmon steak of fillet

1 medium bulb of fennel

1 small  lemon

2 tablespoon extra-virgin olive oil

2sprigs of rosemary

1 clove of garlic

1 small green chilli

300g new potatoes

3 spring onions

Balsamic syrup

Sea salt and black pepper

Method:

Rub the salmon with olive oil, season with a little sea salt and black pepper.

Crush the garlic clove and mix with a few of the rosemary leaves. Add a finely chopped chilli. Spread over the salmon. Set aside.

In a pan of lightly salted boiling water, cook the new potatoes for approximately 20 minutes or until cooked to your taste. Drain.

Put into a bowl and add a little extra virgin olive oil and a chopped spring onion. Mix thoroughly together with some freshly ground black pepper. Set aside.

Peel outer layers of fennel and slice. Add 1 tablespoon of extra virgin olive oil with the juice of the lemon and 2 teaspoons of Balsamic syrup. 

Season lightly with sea salt and black pepper, and set aside.

Heat the grill or griddle pan until hot.

Cook the salmon on either side for approximately 12 minutes, turning once.

To serve spoon the fennel onto a plate and place salmon on top.

Serve with the new potatoes.
