Manyfacesofpotatoes.co.uk have created this delightful dish to start you on the right track in 2013. It’s super easy to make and is only 265 calories per portion, with just 1g of saturated fat!
Potato and Chick Pea Curry
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 4
Ingredients:
• 4 smooth potatoes (such as Desiree), skin on and cut into small cubes
• 1tbsp oil
• 1 onion, sliced
• 2 cloves garlic, crushed
• 2tbsp medium madras curry paste
• 2tbsp tomato puree
• 420g can of chick peas, drained
• 2tbsp mango chutney
• 300ml vegetable stock
• ¼ cucumber, finely chopped
• 2tbsp fresh coriander, chopped
Method:
Add the oil to a large saucepan and heat.
Then add the onion and garlic and cook for 1-2 minutes.
Add the potatoes, madras curry paste, puree, chick peas and mango chutney and combine well.
Add the stock and bring to the boil, then cover with a lid and fast simmer for about 15-20 minutes until the potatoes are soft.
Serve sprinkled with cucumber and coriander.
