Smoked Pork Sausage Salad

Serves a family of 4

1 Mattessons Smoked Pork Sausage – sliced - £1.43

500g new potatoes – washed and thickly sliced – 50p

200g green beans – trimmed and halved – 99p

1 bag of mixed salad leaves - £1

 

Price per head – 98p

 

  1. Cook the potatoes in a pan of boiling water for 10 minutes, adding the green beans after 9 minutes.

 

  1. Meanwhile, heat a splash of oil in a frying pan and add the Smoked Pork Sausage to the onion. Cook for 5 minutes.

 

  1. Drain the potatoes and beans; tip them into the frying pan with the onion and sausage and sauté for 2 minutes.

 

  1. Place a spoonful of the mix onto a plate and top with mixed salad leaves.

 

Tip: Add red onion for extra flavour and colour. Serve with your favourite salad dressing.
