It's Red Tractor Week, when we celebrate everything that's good about British food. The campaign aims to teach people that the logo indicates quality food from a reputable source, not to mention how great it tastes.
The campaign is being fronted by impressionist and actress, Debra Stephenson, who has put together a series of recipe videos to show that British food can be ethically sourced and great tasting.
Tomato no sugar Ketchup
Ingredients:
- 250g Red Tractor certified tomatoes (preferably skinned and deseeded in order to make very smooth - or not - if you prefer it more textured)
- 2-3 sundried tomatoes
- 1/2 teaspoon honey
- 1 teaspoons cider vinegar
- 2 tabelspoons of tomato purée
- 1 teaspoon of garlic purée
- 2 large handfuls of fresh basil leaves
- A pinch of dried mixed herbs
Instructions:
- Place all of the ingredients together into a blender and pulse for about 30 seconds or until you have the desired consistency.
- Keep in a jar with the lid on for a week or 2 and use as and when desired.
Potato, spinach & cheddar frittata
Ingredients:
- 1kg /2lb 2oz Red Tractor new potatoes
- 225g/8oz bag Red Tractor young spinach
- 25g/1oz Red Tractor Country Life English butter
- 1 tbsp. rapeseed oil
- 1 bunch Red Tractor spring onions, chopped
- 1 garlic clove, crushed
- 100g/4oz Red Tractor Cheddar Cheese, grated
- 6 medium eggs
- 3 tbsp. Red Tractor milk
- Salt and freshly ground black pepper
Instructions:
- Simmer the potatoes in lightly salted water for about 15 minutes until just tender.
- Drain and slice thickly. Cook the spinach in a tiny amount of water for 3-4 minute until the leaves wilt. Drain Well and then squeeze out the excess moisture
- Heat the butter and olive oil in a large non-stick frying pan. Gently fry the spring onions and garlic for about 3 minutes, and then add the potatoes. Cook over a low heat for about 10 minutes, stirring occasionally.
- Add the spinach, stirring it through, and then scatter the grated cheese on top.
- Preheat the grill. Beat the eggs and milk together, season, then pour into the frying pan. Cook on the hob over a low heat until set, then brown and set the surface under the grill. Cool for a few minutes, and then slice into wedges. Serve hot, warm or cold.
