The Baileys Slice of Christmas

50ml Baileys®

25ml Grand Marnier®

Cinnamon stick and powder

Turn a tumbler upside down and dip the rim into a dusting of cinnamon to delicately decorate the top of the glass. In a cocktail shaker combine the Baileys and Grand Marnier and serve on the rocks inside the glass. Garnish with a cinnamon stick encased in a twirl of orange peel.

50ml Baileys® with a hint of Coffee

1 Shot of espresso

90ml Sugar syrup

90ml Whipping cream

Add 50ml-chilled Baileys with a hint of Coffee to a frozen martini glass. In an ISO whipped cream charger* add 1/3 espresso shot, 1/3 (90ml) sugar syrup, 1/3 (90ml) whipping cream and charge with two NCO2 cartridges to create a foam.

Add a layer of the frothy coffee mousse across the surface of the Baileys to garnish.

The Baileys Snowflake

Ingredients

25ml Baileys® Biscotti Flavour

10ml Smirnoff® Vanilla Vodka

10ml Butterscotch schnapps

50ml Single cream

Method

Add the spirits and cream to a cocktail shaker. Fill a separate pint glass with ice cubes, and shake the two together with a bartender’s flourish. Pour the mixture through the cocktail strainer into a chilled martini glass.

For an extra special touch…before pouring the cocktail into the glass, dip the top of the glass in a small saucer of water so that 1 or 2mm of the glass is covered. Then dip the wet glass rim into a dusting of coconut shavings. Carefully turn the glass around the right way and pour in the delicious Baileys cocktail – being sure not to lose any of the coconut around the top.

UNITS: 1.1 per serve
