Chef Leigh Evans has broken the Guinness World Record for the biggest ever Scotch egg

Leigh Evans, who works in the kitchen at Clarence Court, an egg producer, made it into the Guinness World Records after whipping up an 8.3kg (18lb) vegetarian version of the picnic treat.

After spending six hours creating the savoury treat - with a recipe that included one kilogram of grated cheese, two kilograms of breadcrumbs and five kilograms of peas - Leigh said: “This was a first for me, having not created anything so large in my cooking career.

“I always enjoy a challenge, and this was one that I really did enjoy doing.

“I am delighted to have broken a Guinness World Record title and have had enormous fun creating this much-loved picnic staple.”

The feat was verified by a representative from the Guinness World Records and confirmed by two supervisors.
