INGREDIENTS
1 Can White Beans, drained
1 Large Cucumber, diced
½ Cup Edamame, de-shelled
1 Tablespoon Cilantro, chopped
1 Cup Grape Tomatoes, quartered
1 Red Bell Pepper, diced
1 Yellow Bell Pepper, diced
4 Roasted Red Peppers
1 Tablespoon Pine Nuts
1 Tablespoon Pear-Infused Vinegar
1 Tablespoon Olive Oil
1 Clove Garlic, roasted
1 Tablespoon Pine Nuts
1 Tablespoon Cilantro
DIRECTIONS
- Combine the beans, cucumber, edamame, a tablespoon of cilantro, tomatoes, peppers, and a tablespoon of pine nuts in a large bowl and toss thoroughly.
- Combine the remaining ingredients in your NutriBullet and Blast.
- Drizzle the dressing over the bean salad and toss thoroughly until all the veggies are completely coated.
