4 Roasted Red Peppers

1 Tablespoon Pine Nuts

1 Tablespoon Pear-Infused Vinegar

1 Tablespoon Olive Oil

1 Clove Garlic, roasted

1 Tablespoon Pine Nuts

1 Tablespoon Cilantro

DIRECTIONS

  1. Combine the beans, cucumber, edamame, a tablespoon of cilantro, tomatoes, peppers, and a tablespoon of pine nuts in a large bowl and toss thoroughly.
  2. Combine the remaining ingredients in your NutriBullet and Blast.
  3. Drizzle the dressing over the bean salad and toss thoroughly until all the veggies are completely coated.
  4. Enjoy!
