2 oranges
150g pack of hon-shimeji mushrooms
3 tablespoons sunflower oil
225g (8oz) brown/chestnut mushrooms, sliced thickly
125g pack of oyster mushrooms
2 tablespoons sesame seeds, toasted
75g (3oz) baby leaf spinach
1. Peel and segment one of the oranges.2. Gently break up the cluster of hon-shimeji mushrooms.
3. Heat the oil in a large frying pan, add all the mushrooms and cook for 5 minutes.
4. Add the sesame seeds and the grated rind and the juice of the remaining juice, stir in the orange segments and spinach.
5. Heat through, then serve immediately.
