(Gluten and Dairy Free, Vegan)
Simply add this delicious home-made pesto to a bowl of courgetti for a super-healthy lunch.
Makes: around 200ml
Takes: 5 minutes
What you need:
70g parmesan grated (or vegan alternative)
30g basil
1 clove garlic
2tbsp Meridian pumpkin seed butter
75ml olive oil
What you do:
Whizz all the ingredients together in a blender until smooth.
Notes: This makes quite a thick pesto, add more olive oil if you want it thinner.
