As it’s Wimbledon that means eating plenty of strawberries and we’ve got a delicious new way for you to eat them.
This Strawberry Shortcake recipe from capristrawberries.co.uk is great for entertaining and treating yourself!
Here’s what you’ll need and how to make some for yourself.
Strawberry Shortcakes
Preparation time: 15 minutes
Cooking time: 9-10 minutes
Serves: 4
Ingredients:
100g butter, softened
50g caster sugar
150g plain flour
50g plain chocolate
200g Capri strawberries
150ml double cream
Method:
Preheat the oven to 190oC, gas mark 5.
Whisk the butter and sugar together until pale and fluffy. Mix in the flour and roll out on a floured surface to 0.4cm thick. Cut out 12 circles (7cm) and place on a baking tray. Bake for 9-10 minutes until golden. Allow to cool on a wire rack.
Melt the chocolate in a small bowl over a pan of boiling water and dip 4 whole strawberries to coat half way up. Place on a sheet of parchment and chill until set.
Hull and chop half the remaining strawberries and slice the rest.
Whisk the cream to soft peaks and stir in the chopped strawberries.
Place 4 shortbread rounds on 4 plates, top with the sliced strawberries and then spoon over the cream. Top with another 4 shortbread rounds. Drizzle with remaining chocolate and place the chocolate coated strawberries on top.
