Apple and Orange Mini Pies

Makes 10

Muffin tins which gives a perfect size for dessert or tea time. The combination of apple and marmalade means there is no need to add further sugar to the mix. Using reduced sugar marmalade is particularly tasty.


Ingredient's:

1 x 500g pack Jus Rol Shortcrust Pastry

2 good sized cooking apples - peeled, cored and cut into smallish dice

2-3tbsp. marmalade

Little caster sugar for sprinkling (the golden caster is good for this)

Zest of 1 orange for decoration - optional

Water for brushing


Method: Follow pastry preparation instructions. Preheat oven to 200°C (180°C for fan assisted ovens) Gas Mark 6


Roll out pastry large enough to cut out 10 discs to line the muffin tin moulds and ten smaller discs for lids (NB you may have to re-roll the pastry to achieve this.
Combine the prepared apple and marmalade and divide between the pastry cases, lightly brush the undersides of the smaller discs and press firmly onto each mini pie.
Make a small hole in the top of each to allow the steam to escape, then brush each with water and sprinkle lightly with the golden caster sugar. Bake for 18-20 minutes until pastry cooked and golden. Scatter with grated orange zest as immediately they are removed from the oven if desired. Serve warm with custard.
